Wine

Gaelic Cemetery Vineyard McAskill Shiraz honours John McAskill, who originally donated the land next to the winery where its namesake Gaelic Cemetery lies.

The wine is made from Shiraz grown on the estate vineyard at White Hut in the Clare Valley. It is only produced in small volumes.

The grapes are destemmed into small open fermenters, chilled and cold soaked for several days before natural yeasts begin the ferment. After two weeks the wine is pressed to new and seasoned French barrels to age for 18 months.

Deep red, Gaelic Cemetery Vineyard McAskill Shiraz is medium to full bodied with red fruit flavours, warm spice and fine tannins. Cellaring potential is 12 years.
